The 8 Thai Ladies restaurant will be opening its doors in the coming weeks and expanding from the Collie Blueberry Farm to the old Rajputana Indian Cafe Restaurant building in town.
8 Thai Ladies owner Wannaporn Hooley said she was looking forward to bringing her business into town.
“I have always wanted to own my own coffee shop and this is just another step for us,” she said.
“At the Collie Blueberry farm we’re not open for walk ins, we don’t have coffee and people can only book in advance. So I thought I would open something in town.
“Also I wanted to help the town look better because this spot is beautiful but when I drive past it’s empty and it feels sad. I thought if we opened it up it wouldn’t just be for us but for the whole community of Collie.”
Mrs Hooley said the restaurant would have a selection of European and Thai style food, homemade cakes, jams, marmalade, coffee, including the keto diet bulletproof coffee and will also offer take away options.
“Bulletproof coffee is for people who are on a low carb diet, it has 100 per cent grass fed butter and 100 percent medium chain triglycerides coconut oil and good coffee. I drink it but I would like to share it with everybody,” she said.
She said she would aim to open seven days a week if the community supports her.
“We are definitely going to open on the weekends because we have a lot of customers come to the farm and they’re looking for somewhere to eat on a Sunday,” Mrs Hooley said.
“When we open we will try and open seven days a week and test what days are worth staying open. To run successfully everyone in the community needs to support us.”
